The key to oven baked chicken is to cook it at 400 F for 50 minutes, and make sure to pay the chicken skin dry. The boneless and skinless chicken thigh has a tasty spice rub on it and is cooked in the pan until crusty.   2. Boneless Chicken Breast
    1. Heat oven to 400°F, rack in center position.
    2. Lightly butter a sheet of aluminum foil and a sheet of parchment paper.
    3. (Optional: Rub a tiny amount of olive oil all over the chicken) Season chicken with your choice of spices, sauces, and/or lemon wedges.
    4. Place aluminum foil in pan, followed by chicken.
    5. Place parchment paper on top of chicken and tuck edges.
    6. Bake 20-40 minutes until chicken is completely opaque and internal temperature reaches 165°F.
    7. Leftovers may be refrigerated for up to one week or frozen for later.

    It’s hard to believe that such a simple process could turn a few chicken thighs into such a delicious meal. This is so good that you’ll want to eat it all yourself and watch others at the table go hungry. Scroll down for the full recipe.

    What You’ll Need

    • 6 to 8 chicken thighs (boneless and skinless)
    • 1 Tbsp low sodium soy sauce
    • 1 Tbsp olive oil
    • 4 cloves garlic (pressed, or 1 Tbsp garlic powder)
    • 1 tsp salt
    • 1 tsp freshly ground black pepper (plus more to taste)
    • 1 tblsp mild English Mustard
    • 1/4 cup fresh thyme (finely chopped, plus more for garnish)
    • 1/4 cup fresh parsley (finely chopped, plus more for garnish)
    What To Do

    1. Place the ingredients in a large bowl and mix thoroughly.
    2. Place chicken thighs in the bowl and thoroughly coat the chicken with the mixture.
    3. Cover the bowl with cling wrap and refrigerate for at least 30 minutes.
    4. Preheat a large skillet with a tablespoon of butter over high heat.
    5. Place the chicken thighs in the skillet, and sear both sides of the chicken for 1 minute until browned.
    6. Reduce heat to medium and cook for another 4 minutes, flipping chicken thighs twice.
    7. Reduce heat to medium-low, cover the skillet with a lid and cook for another 3-4 minutes flipping once until fully done.
    8. Serve with your favourite side dish.
