How Do I Choose the Best Gai Lan

  1. Gai! Lan!

    – 3 stems of gai lan/chinese broccoli (separate the stems from the leaves)
    – 2 thai bird eye chillies
    – 1/4 holland onion
    – 1/4 cup of water
    – 2 slices of salted fish (mackerel)

    Blended ingredients :

    – 1/2 bombay onion
    – 2 cloves garlic
    – 1 red chilli
    – 1/4 cup water

    Gai Lan

    (Serves 2)

    1/2 pound gai lan (Chinese kale)
    3-4 cloves garlic, minced
    1/2 teaspoon ginger paste
    2 tablespoons olive or vegetable oil
    1 teaspoon rice wine
    1/4 teaspoon white pepper
    1 teaspoon soy sauce

  4. Gai Lan

    8 to 10 oz. gai lan (or other Chinese green vegetable)
    1 teaspoon cooking oil
    1 teaspoon salt
    1 teaspoon chopped ginger
    1 teaspoon chopped garlic
    3 tablespoons oyster flavor sauce

    In a pot bring 3 or 4 cups water to a boil. Add cooking oil. Add salt, ginger and garlic and let boil briefly. Clean gai lan stalks and drain. Cut off the rough bottom of the stalks. Add gai lan to boiling water. Boil gai lan for 5 minutes if you like vegetables crunchy. Boil 10 to 15 minutes for more tender vegetables. Remove gai lan from pot and arrange on a plate. For nice presentation, keep all the stalks facing in one direction. Pour some oyster flavor sauce over the stalks and then serve. Enjoy!

    Beef Marinade:
    3/4 lb Beef flank steak
    1/2 Teaspoon Soy Sauce
    2 Teaspoon Vegetable Oil
    1/2 Teaspoon Cornstarch
    1/2 Teaspoon Kosher Salt
    1/4 Teaspoon Sugar
    1/4 Teaspoon White Ground Pepper
    2 Tablespoons Water
    1 Teaspoon Sesame Oil
    2 Teaspoons Oyster Sauce
    1 Teaspoon Soy Sauce
    1 Teaspoon Corn Starch

    Stir Fry
    1/2 Pound Chinese Broccoli (Gai Lan)
    2 Tablespoons Vegetable Oil
    8 Cloves Garlic
    Serve with Rice

    1.) Combine together the ingredients for the marinade in a bowl and let it sit in room temperature for 30 minutes max.
    2.) Prepare the sauce ahead of the time, combine all the listed ingredients for the sauce.
    3.) Fill a pot halfway with water, season with salt, and let it boil. Add the Chinese broccoli and cook for 1 minute. Drain.
    4.) Wipe the pot clean, add 1 tablespoon oil, and heat high until it becomes smokey. Add the marinated beef and lay it flat without stirring for 1 minute. Then stir and cook for 2 minutes while stirring. Remove it from the heat.
    5.) Add 1 tablespoon of oil into the pot, and heat on high heat. Add garlic and cook for 1 minute, add Chinese broccoli and cook for 1 minute, season with salt.
    6.) Add the beef and stir. Add in sauce and stir until it thick, for about 1 minute. Serve with rice. Best eaten right after its made.
