You will not believe how EASY this breakfast casserole is! Hash Brown Breakfast Casserole is gluten-free, feeds a crowd, and can be changed up to base your tastes–use sausage, ham, veggies, cheese–whatever you like. You can make this casserole the morning of, the night before–whatever is easier for you!
Holiday Breakfast Casserole
32 oz pkg frozen shredded hash browns
1 lb pork sausage, cooked and drained
1/2 lb bacon, diced and cooked
1 medium green bell pepper
2 cups shredded cheddar cheese
2-3 green onions chopped
1 cup biscuit/baking mix
1/2 tsp salt
2 1/2 cups milk
In a large bowl combine hash browns, sausage, bacon, green
pepper, 1 cup of cheese and the onion. Transfer to a greased
9 x 13 baking dish. In another bowl whisk together biscuit
mix, salt, eggs and milk, pour over the top and sprinkle with
remaining cheese. Cover and refrigerate overnight.
Remove from refrigerator 30 minutes before baking, preheat
oven to 375 degrees and cook for 30-35 minutes. Let sit for
10 minutes before cutting.
