    This Creamy One Pot Butternut Squash Pasta is the perfect restaurant-quality pasta dish that’s so easy to make at home with just a few ingredients!

    Recipe:
    1 large butternut squash, halved and baked, scraped from skin
    1-2 cans of coconut milk (cashew or oat milk will also work)
    1 1/2 tsp garlic powder
    3/4 tsp Himalayan pink salt
    1 tsp oregano
    1 tsp black pepper
    pinch crushed red pepper
    1/4 tsp cinnamon
    1 tsp paprika
    1 zucchini
    1 small onion, diced
    1 box or bag of noodles you like ( we used GF lentil noodles)

    Halve and clean the gunk out of your butternut squash. I wipe mine down with a tiny bit of olive oil and then bake open side down on 375* for 30 minutes, until a knife inserted into goes through easily. Cool, and scrape from skin.

    Add butternut squash, spices and coconut milk to the blender and blend it up until smooth.

    Saute the zucchini and onion until the onion is translucent. You can use any vegetable you like for this part, or leave out these veggies completely. We have done asparagus, peppers, etc. This part is very versatile.
    Cook pasta according to package directions.

    Add the sauce, pasta, zucchini and onion and mix well. We topped ours with halved cherry tomatoes and fresh basil. Serve with salad. YUM!
