Pâte de Fruit
PÂTES DE FRUITS.
BLACK CURRANT PÂTES DE FRUITS RECIPE.
300 gr black currant puree
200 gr sugar
1 tsp lemon juice
1 tsp Apple(yellow) pectin
In a small sauce pan, add black currant puree. Put on medium heat.
Mix i tsp of Apple pectin with 1 tsp of sugar, add to puree and mix well.
When your puree comes to a boil, add remaining sugar, mix well and bring to soft boil again.
Insert candy thermometer and constantly stirring your puree wait till mixture reaches 200°F(100°C) or until darkens in color and thickens. Look for these signs: Bubbles are slow and look like lava, when spoon lifted, mixture just hangs off the spoon.
Take off the heat, pour lemon juice and start pouring into mold immediately.
Leave for couple hours to set.
Unmold and roll in granulated sugar.
