Health Benefits Of Rapini

One of the absolute best is rapini also known as broccoli raab. There’s just one problem, rapini can be a bit bitter. Not anymore, thanks to our tried and true way of preparing it. Say goodbye to bitter, say hello to delicious!

Here’s how to make this delicious side dish:
1 bunch of rapini, ends trimmed
1 T of extra virgin olive oil
1 T of butter
3 cloves of garlic, finely diced
1 teaspoon of chili flakes
sprinkle of salt
juice from half a lemon
¼ C of shaved Parmesan cheese
1) Cook rapini in a pot of boiling water for 2 minutes. Strain and immediately transfer to an ice bath to cool. Lay cooked rapini onto a clean dish towel to dry.
2) Heat oil and melt butter in a large skillet set to medium-high heat. Add garlic and chili flakes and cook until fragrant. Add rapini, salt and lemon juice. Toss the rapini in the pan to heat.
3) Transfer to service platter garnish with cheese and serve.
