    DescriThis is a cooking tutorial for a Summer vegetable dish of Italian flat beans sauteed with sweet cherry tomatoes and accompanied with cod filets smothered in sour cream, Dijon mustard and dill. It is low carb step-by-step cooking at it’s finest!

    Recipe Ingredients/Bean dish

    2-4 Tbsp olive oil
    1 large onion, chopped
    2-3 cloves garlic, minced
    1-2 lbs Romano flat beans
    1-2 tsp oregano
    1 tsp salt
    1/2 cup water (optional)
    1/4 cup tomato shrub syrup (optional)
    1 pint cherry tomatoes


    Rinse beans and remove stem end
    Sauté chopped onion in 2 Tbsp oil for 5 minutes or until golden
    Add garlic for 30 seconds
    Add beans, oregano, salt, water or shrub syrup and cook over medium heat for 10 minutes
    Add cherry tomatoes and mash with fork and cook another 10 minutes, covered

    For cod:

    Dry 4-6 filets of cod with paper towels
    Sprinkle with salt and pepper
    Mix together 1/2 cup sour cream with 1/4 cup Dijon mustard
    Sprinkle with paprika or seasoning of your choice
    Cook at 350 degrees for 10 minutes or until no longer translucent (don’t overcook)ption
